A Taste of Easter Buns
With Easter just around the corner, it can be tempting to overindulge in foods which can be a problem for your diabetes. These buns are a taste of easter, a small amount of dried fruit spread between 12 buns along with the spices. They are sweetened with apple. These are a treat food, a portion is one bun. They freeze well.
A Taste of Easter Buns
Makes 12 buns
Ingredients
½ c currants or chopped dates
¾ c ground flaxseeds
1 c ground almonds
½ c tapioca starch
1 medium sized apple
The rind and juice of 1 orange
75g butter
2 tsp cinnamon
2 tsp mixed spice
1 tsp baking powder
2 tsp instant yeast
2 tsp apple cider vinegar
4 eggs beaten
4 Tbsp tapioca starch for decorating if desired
1 tsp psyllium husks
Preheat your oven to 180 degrees Celcius. Line a baking tray with baking paper. Pour the juice of the orange over the dried fruit and leave to soak. Peel and core the apple and cut into even sized pieces. Pour ¼ cup boiling water over the apples and cook in a small pot until tender. Using a stick blender puree the apple.
Add the butter to the hot apple puree and mix until it is melted. Add the yeast, orange rind, and the currants to this mixture.
In a large bowl mix together the ground flaxseed, ground almonds, tapioca starch, baking powder, and spices and mix well until combined. Add the warm apple mixture, apple cider vinegar, and the beaten eggs. Mix together - the mixture will be quite wet. There are two options you can leave the mixture in a warm place for an hour to thicken and then shape into 12 buns. Space these evenly on a baking tray.
Alternatively, you can place the mixture into a greased muffin tray if you are short of time. Mix the tapioca starch and psyllium with enough water to make a paste, about 4 tablespoons. Place into a snaplock bag and snip the corner to make a piping bag. Decorate your buns as desired. Bake for 30-40 minutes or until golden.
